{pancakes}


last night for dinner we had:
pancakes, pizza, and popcorn.

and it was awesome.

especially the pancakes--sometimes, i'm just in the mood for a good pancake.

i try different recipes almost every time
(i'm not a bisquick girl, sorry!)

but i thought this one was worth sharing.

ingredients:
1.5 cups all purpose flour*
3 T sugar
1 3/4 t baking powder
1 t salt
3 eggs
3 T unsalted butter (melted + cooled)
1.5 c buttermilk (or regular milk + a little vinegar)
up to .5 cup milk
whatever toppings you like (maple syrup, jam, honey, peanut butter...)

directions:
combine flour, sugar, baking powder and salt in large bowl. in a separate smaller bowl, whisk eggs, 3 T butter and buttermilk. whisk wet ingredients into dry until combined (leave some small lumps). cover batter and let rest overnight in the refrigerator. in the morning, heat a skillet/griddle over medium while adding milk until it reaches the consistency you like (if you like them thin, add a 1/2 cup, if you like them thicker, add less). spray the pan and cook pancakes, keeping them warm in a 200 degree oven until all the pancakes are finished. go crazy with the toppings--seriously, if you haven't tried peanut butter, you must. and enjoy.

*next time, i might try using half whole wheat flour, half all purpose and see how it goes. also, i love mix-ins in my pancakes, particularly oats and chocolate chips. next time.

  1. Yumo! We love waffles in our house...a recipe I love is from allrecipes.com and is whole what, oatmeal and ground walnuts for texture and I add flaxseed. I can share recipe if you want!
